Mulled wine, or Glüehwein as it is called in Austria and Germany is an easy and delicious drink prepared by heating Hillier Creek Estates Pino Noir together with aromatic spices and citruses.

This drink is most often associated with cold weather or the Christmas season, but we love it year round. Such a great way to relax, sip and reflect upon the day – no matter what the weather!

If you don’t have to drive anywhere, try it with a shot of brandy. Guaranteed to warm you up on a chilly night!


  • 750 mL Bottle of Hillier Creek Estates Pino Noir wine
  • 1 orange
  • 6 of whole cloves
  • 1 teaspoon of ground ginger
  • ½ teaspoon of ground cinnamon
  • ¼ teaspoon of whole anise
  • ¼ teaspoon of ground nutmeg
  • ½ cup of water
  • 2-3 table spoons of local, natural honey (or sugar to taste)

Glühwein is best when prepared and garnished with whole spices, however ground spices work just fine but do not strain as cleanly.

To Prepare

  • Combine spices in a cooking pot, add ½ cup of water and stir on moderate heat up to a boil;
  • Let boil for 2 minutes and set aside for 10 minutes to let spices to reveal themselves;
  • Add honey (or sugar), return pot to the burner and add whole bottle (750 mL) of Pino Noir
  • Wash oranges and slice them into circles:
  • Heat up wine mixture almost to boiling point, then turn heat off.
  • Strain spices and pour hot mulled wine into mugs or heatproof glasses, garnish and enjoy!
